Recipe:

Ingredients:

2-3 large sweet onions, sliced into thick rings

1 cup shredded mozzarella cheese (or your favorite melting cheese)

1/2 cup grated Parmesan cheese

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: garlic powder or Italian seasoning for extra flavor

Instructions:

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare Onion Rings: Separate the onion slices into individual rings. Place them in a single layer on the baking sheet.

Season and Stack: Drizzle a bit of olive oil over each onion ring, and sprinkle with salt, pepper, and any other desired seasonings. Stack the rings in piles of 2-3 layers, adding a sprinkle of mozzarella and Parmesan cheese between each layer.

Bake: Place the baking sheet in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly, and the onions are tender.

Garnish and Serve: Remove from the oven and garnish with fresh parsley. Serve warm and enjoy these cheesy, flavorful stacks!
