Ingredients

For the Meatloaf Cupcakes

  • 1½ lbs ground beef (85/15 blend for best flavor)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 large egg
  • ½ cup milk
  • ½ cup bourbon BBQ sauce (plus more for topping)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Mashed Potato Frosting

  • 2 lbs potatoes, peeled and cubed
  • 4 tablespoons butter
  • ½ cup milk or cream
  • Salt and pepper to taste
  • Chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with silicone liners.

  2. Make the meatloaf mixture:
    In a large bowl, combine ground beef, onion, garlic, breadcrumbs, egg, milk, BBQ sauce, Worcestershire sauce, smoked paprika, salt, and pepper. Mix until just combined — don’t overmix or the meat will be tough.

  3. Shape the cupcakes:
    Divide the mixture evenly into the muffin tin cups, pressing lightly to shape.

  4. Bake:
    Bake for 20 minutes, remove from oven, and brush the tops with extra BBQ sauce. Return to oven and bake for another 10–15 minutes, or until the internal temperature reaches 160°F (71°C).

  5. Make the mashed potatoes:
    While meatloaves bake, boil potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter, milk/cream, salt, and pepper until smooth and fluffy.

  6. Assemble:
    Once meatloaf cupcakes are done, let them rest for 5 minutes. Pipe or spoon mashed potatoes on top like frosting.

  7. Serve:
    Drizzle with more BBQ sauce and sprinkle with parsley before serving.
