Ingredients for Canning Ginger Water

You only need a few simple ingredients to make this homemade preserved drink.

  • 500 grams fresh ginger root
  • 4 liters clean water
  • 1 cup bottled lemon juice (important for safe canning)
  • 1 cup sugar (optional)
  • 1 teaspoon salt (optional)

Canning Equipment

  • 4–6 glass canning jars with lids
  • Large boiling pot
  • Jar lifter or kitchen tongs
  • Fine strainer
  • Clean cloth or towel

Step-by-Step Guide to Canning Ginger Water

Step 1: Prepare the Ginger

Wash the fresh ginger thoroughly under running water to remove any dirt. Use a spoon or knife to gently peel the skin. Slice the ginger into thin pieces to help release more flavor during boiling.

Step 2: Boil the Ginger

Pour 4 liters of water into a large pot and add the sliced ginger.
Place the pot on medium heat and bring it to a boil.

Once boiling begins, reduce the heat and let the mixture simmer for 30 to 40 minutes. During this time, the water will turn light yellow or golden as the ginger flavor infuses.

Step 3: Add Lemon Juice and Sugar

Turn off the heat after simmering.
Add 1 cup of bottled lemon juice, which is essential for safe canning because it increases acidity.

If you prefer a sweeter drink, stir in 1 cup sugar until fully dissolved.
You may also add 1 teaspoon salt for a balanced flavor.

Step 4: Strain the Ginger Water

Place a fine strainer over another pot or bowl. Carefully pour the hot ginger liquid through the strainer to remove all ginger slices.

Press the slices gently with a spoon to extract as much liquid as possible. The used ginger can be discarded or reused for making tea.

Step 5: Sterilize the Jars

Wash the glass jars and lids with hot soapy water and rinse thoroughly.

Place the jars in boiling water for 10 minutes to sterilize them. This step is essential for safe food preservation. Keep the jars warm until you are ready to fill them.

Step 6: Fill the Jars

Carefully pour the hot ginger water into the sterilized jars.

Leave about 2 cm (1 inch) of space at the top of each jar. Wipe the rim with a clean cloth to remove any liquid. Place the lids on the jars and close them securely.

Step 7: Process the Jars

Place the filled jars in a large pot of boiling water. The water should cover the jars by at least 2–3 cm.

Boil the jars for 15 minutes to properly seal them and ensure safe storage.

Step 8: Cool and Store

Remove the jars carefully using a jar lifter or tongs. Place them on a clean towel and allow them to cool completely.

You may hear a popping sound as the lids seal. Once cooled, press the center of each lid. If it does not move, the jar is sealed properly.

Store the sealed jars in a cool, dark place.
