Ingredients

  • 1 whole pineapple, peeled and cut into chunks
  • ½ papaya, seeded and chopped
  • 3–4 mandarins or tangerines, sliced
  • 1 large piece fresh ginger root, sliced
  • 1 medium piece fresh turmeric root, sliced
  • 1–2 cinnamon sticks
  • 1 tablespoon whole black peppercorns or whole cloves
  • 4–6 cups water

Instructions

Step 1: Prepare the Concentrated Base

  1. Wash the ginger and turmeric thoroughly.
  2. Add the ginger, turmeric, part of the papaya, and some mandarin pieces to a blender.
  3. Add a small splash of water and blend until smooth.

Step 2: Simmer the Ingredients

  1. Place the pineapple chunks, remaining papaya, mandarin slices, cinnamon sticks, and black peppercorns in a large pot.
  2. Pour in the blended mixture.
  3. Add enough water to cover the ingredients.
  4. Bring to a boil over medium-high heat.
  5. Reduce the heat, cover, and simmer for 30–45 minutes.

Step 3: Strain the Drink

  1. Remove from heat and allow to cool slightly.
  2. Strain through a fine-mesh sieve or cheesecloth.
  3. Press the fruit pulp to extract as much liquid as possible.

Step 4: Store

  1. Pour the liquid into clean glass bottles or jars.
  2. Refrigerate until chilled.

Serving Suggestions

  • Serve warm as a soothing herbal fruit tonic.
  • Serve cold over ice for a refreshing tropical drink.

Storage
