Ingredients

For the Crust:

  • 1 ½ cups almond flour
  • ¼ cup melted butter
  • 2 tablespoons powdered erythritol (or preferred keto sweetener)
  • ½ teaspoon vanilla extract

For the Lemon Filling:

  • ¾ cup cream cheese, softened
  • ½ cup heavy cream
  • ⅓ cup powdered erythritol (adjust to taste)
  • 3 large eggs
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • ½ teaspoon pure vanilla extract

Instructions

Step 1: Prepare the Crust

  1. Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a bowl, combine almond flour, melted butter, erythritol, and vanilla extract.
  3. Mix until crumbly and well combined.
  4. Press the mixture firmly into the bottom of the prepared pan to form an even crust.
  5. Bake for 10–12 minutes, or until lightly golden. Remove from the oven and let it cool slightly.

Step 2: Make the Lemon Filling

  1. In a mixing bowl, beat the cream cheese until smooth and creamy.
  2. Add heavy cream, erythritol, eggs, lemon juice, lemon zest, and vanilla extract.
  3. Whisk or blend until fully combined and smooth — avoid overbeating to prevent air bubbles.

Step 3: Bake the Lemon Squares

  1. Pour the lemon mixture evenly over the cooled crust.
  2. Bake for 20–25 minutes, or until the center is set but still slightly jiggly.
  3. Allow to cool completely at room temperature, then refrigerate for at least 2 hours to firm up.

Step 4: Slice and Serve

  • Cut into 12 equal squares using a sharp knife.
  • Serve chilled for the creamiest texture.
  • Optional: Dust with extra powdered erythritol or add a thin lemon slice on top for presentation.

Storage

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • For longer storage, freeze individual squares for up to 2 months and thaw in the fridge before serving.

Tips for Perfect Results

  • Use room-temperature ingredients for a smooth, lump-free filling.
  • Avoid overbaking — the filling will continue to set as it cools.
  • For a stronger lemon flavor, increase zest or juice slightly.
